Dry white wine from the variety Debina, from selected vineyards in the hilly region of Zitsa and at an altitude of 700 meters above sea level.
The vinification follows the tradition of the region, where the marc are fermented with the must at low temperature and only with the native fungi. The above process results in the particular amber color of the wine.
SOIL: Calcareous soils with steep slopes, which provide them with good drainage from water.
VINIFICATION: Grapes are handpicked early in the morning, transported in small baskets and are then chilled in 8-10 oC in a pneumatic press. White vinification takes place, where the must stays with the marc for 40 days at low temperature with indigenous yeasts, in order to pronounce the varietal aromas of citrus, orange and bergamot.
TESTING NOTES: Dry white wine (orange wine). Amber color with aromatic complexity. Aromas of dried fruits, marmalade, citrus, orange, bergamot, honey, spices. Gentle tannins, balanced acidity and pronounced aftertaste.
SERVING COMBINATIONS: red meats with creamy sauces, lamb, game, sushi, smoked and raw fish, fatty fish, wild mushrooms, truffles, cheeses and sausages.
