Hatzidakis Winery was founded in 1997 by Haridimos Hatzidakis and Konstantina Chrysou. Before, they were both employees of the Boutari Winery in Santorini, the Wine Manager and the Hospitality Manager. It all started when Konstantina showed a neglected vineyard of her family, at an altitude of 330 meters in the village of Pyrgos Kallistis. There was a cave there, where they literally transformed it with a little money, a lot of personal work, passion and passion, in a small winery or as Haridimos used to say in a "Kanavaki". (The Santorini used to call and say their small family wineries)The vineyard where the "Kanavaki" was located was uncultivated since 1956 and so it was a first class opportunity to grow organically. It was the first organic vineyard in Santorini and was certified by DIO. Then, in every vineyard that Haridimos and Konstantina bought or rented, they applied organic cultivation. And so we are in a happy position at the moment, the Hatzidakis Winery to be the only certified organic grower on the island and applies the principles of organic farming to ALL its vineyards.We strongly believe in the quality of the raw material. As Haridimos Hatzidakis used to say, "a good wine is made at the Winery, an excellent wine in the Vineyard". In 2000, the "Kanavaki" began to be really small for the aging needs of Vinsanto in barrels. And so a vineyard was bought, which had a very large cave just below. That's where the winery's cellar became. At that point, on the provincial road of Pyrgos - Emporio, the Hatzidakis Winery was transferred from 2016. It is a special winery that is worth visiting, because it is entirely a cave.This allows it to have a naturally suitable temperature, in other words, excellent conditions for the production and maturation of wines! From August 2017, after the shocking loss of Haridimos Hatzidakis, the eldest daughter of the family, she made the bold decision, against the "sirens", not to sell the Winery. Together with her siblings, Antonis and Ariadne, but with their mother Konstantina and a group of young talented people on their side, their main body is made up of those who were lucky enough to work next to the late Haridimos. like a fist with even greater passion, "having his head held high."The wine potential of the Winery continues to produce quality wines, in limited quantities and oriented to the expression of the island's terroir, through the native varieties of Santorini, making exclusively fermentations with native doughs. The wines of the Hatzidakis Winery have NOT added chemical agents, we let time mature them and they are ALWAYS bottled unfiltered. They are wines made by young people, faithful to the philosophy of the Hatzidakis family, for people who love the quality wine of Santorini, which expresses the absolute formality of the island.Hatzidaki Winery has "open its doors" ALL year round! Autumn, Winter, Spring and Summer, whenever you are in Santorini, we welcome him with great pleasure !!! The trained associates of the Winery are ready to present their work in the best way, by appointment. The tour usually starts from the cave where the stainless steel production tanks are located and ends at the barrel cellar, where Vinsanto (Wine naturally sweet) has been aged for more than 14 years!There, in the wine aging cave in barrels, there are monastic tables and benches where visitors have the opportunity to sit and enjoy 6 different wines of our Winery. Each wine is presented in detail by our partners. The wines are accompanied by Naxos gruyere and nuts or breadsticks. For the tour of the Winery and the tasting of the wines, the visitor will need about an hour, many times more, if he has a lot of interest and several questions. From the new year there will be in the premises of the Winery in a cave, a wine cellar, a wine library, with all the old harvests.Our visitors have the opportunity to learn a lot about the varieties of Santorini, its wines, the microclimate of the island, but also about the rare pruning and organic farming that we apply to all the vineyards that we cultivate.
