Its wines come in deep scarlet colour. When young, they give out aromas of green pepper, blackcurrant and wild cherry, including scents of black and green pepper ar sage.
In warmer climates (Crete), phenolic ripeness produces wines with rich colour, exuberant in terms of flavour and aroma.
It accompanies red meat, bushmeat, roast lamb and spicy cheeses.
