A unique and special white wine from the organic Debina variety, that is cultivated on the slopes of mountainous Zitsa from the 16th century.
SOIL: Calcareous soils with steep slopes, which provide them with good drainage from water.
VINIFICATION: Grapes are handpicked early in the morning, transported in small baskets and are then chilled in 8-10 oC in a pneumatic press. Classical white vinification takes place at low temperature fermentation to pronounce the varietal aromas of citrus, apple and cinnamon.
TESTING NOTES: It has pale straw yellow color with soft greenish tints and a persistent brilliant perlage. Fresh bouquet with notes of white flowers and green apple. Fine, stony, delicate palate, a moderate body, with notes of cinnamon at the finish
SERVING COMBINATIONS: white meats, fish, oysters, pasta, salad and cheese.
