VINEYARDS:
Anavyssos: Private vineyard in Anavyssos, where the climate is dry, with mild winter, few rains and hot summer, with an average annual temperature of 23,8° C.  It has clay soil. The morphology of the soil and the climate combined with the advantages of the coastal region, contribute to the typical characteristics we can find in Malagousia.

 

VINIFICATION:
Pre-fermentation cryo-extraction of the grapes in order to keep the aromatic ingredients that exist in the skin, Juice pressing in pneumatic presses and strict filtration follow next.  The grape must be inoculated with a selected strain of yeast and the alcoholic fermentation takes place at temperatures of  15° - 17° C, in stainless steel tanks and partly in 225L of acacia barrels. The new wine remains in contact with the lees for a few weeks in order to enrich its aroma and flavor.
 
CHARACTERISTICS:
Light yellow color.Strong aromas of white fruits and citrus along with a touch of flowers and herbs. Rich and highly expressive taste that reflects fruity aromas. very good balanced acidity in the mouth with a pleasant peppery flavor and long aftertaste.
 
SERVING SUGGESTIONS: 

Pasta with white sauces, fish with herbs, poultry. Served: Cool (10° - 12° C)
