Dry white wine, from Kefalonian white varieties; Protected Geographical Indication Slopes of Ainos, Kefalonia.

The bottles of white Nautilus 2018, sealed with beeswax in the mouth above the capsule matured from last year, submerged under fresh water, in special tanks of the winery under controlled conditions! A new method which permits maturation and incorporation in absolute conditions of constant temperature, darkness and lack of oxygen!

From the indigenous gape varieties: Tsaousi, Vostilidi, Muscatel, Muscat.

It has bright greenish color; extremely rich aromas with notes of fresh exotic fruits and flavors of dried pear and melon that remain giving abundance and intensity in a perfect finish. Fresh and intense aromatic aftertaste.

Ideal as aperitif; accompanies perfectly creative cuisine and sauces, fine seafood, cheeses, and fruits.

The fruit flavors linger nicely, some dried pear and melon. It is a great finish. Although it will age decently, it will be great this summer. This might be the best intersection of quality and price in this tasting".

Jancis Robinson 2019: Foivos, Nautilus 2018 white: 16,5/20: “After bottling the wine, the bottles were placed for experimental maturation in a cement tank filled with fresh water. Free-run juice only. The initial impression is that inviting dusty/stony aroma I associate with rocky or volcanic soils but there's tangy green fruits and a slightly wild sour note. On the palate, a little more grapey but bone dry and mouth-wateringly fresh. Succulent and yet so dry. Very long finish”.

Domaine Foivos

Foivos winery is the historical continuation of the Mantzavino Winery, which starred in the past two centuries in the world of wine, and made Greek wine known internationally. It is one of the oldest operating winery in Greece and has already produced, since last century, some of the best Greek wines that became known worldwide. Since 1999, a new dynamic effort has begun, severely restricting production quantities, and mainly making exclusively use of the excellent indigenous and autochthonous own-rooted varieties of the Kefalonian vineyard, and of the ideal microclimate of Kefalonia.

In the Domaine Foivos vineyards are cultivated with very mild methods and biodynamic approaches, rare clones of ancient grape varieties such as Mavrodaphne, Muscat, Muscatel, Tsaousi, Vostilidi, Thiako, Araklino. At the same time, the winery manages vineyards in the eastern part of the island, in the region of Omala, for the production of the well-known local variety Robola of Cephalonia. 

A special feature of Foivos winery is the aging of wines under water: Since 2016 the winery started experimental searches of the maturing of wine under water, by immersing bottles for aging in the sea. At the same time, it applies another one innovative method of aging and maturing wines, by submerging bottles under fresh water, in special tanks of the winery, allowing the wine to mature and complete under absolute conditions of constant temperature, darkness and absence of oxygen!
