Aim for a Naoussa that evokes a style of fresh Xinomavro with a very intense nose with a fruity character and very fine tannins. It is a wine of minimal oenological interventions. The grapes were selected from a vineyard in the Marina at a very ripe stage (harvest 26/9/19).Marina was chosen to be able to give this freshness to the wine due to its higher altitude. The grapes were crushed while a small proportion of wholebunch berries was left and fermented in a small stainless steel tank.At no stage of vinification was SO2 added and macro-oxygenation was applied. Maceration lasted 11 days with gentle pump-overs at a temperature of 18-23C while at the end there was malolactic fermentation to soften the wine even further. The wine was left for racking, filtered and bottled.
Visual: Deep red rose color with purple taint.
Aroma: A complex aromatic character characterized by fresh aromas of gooseberry and pomegranate while harmoniously framed by plant elements of eucalyptus, black tea and mint giving it great freshness.
Taste: Medium-bodied with fresh acidity and much softer tannins.
Food pairing: Ideally served with peppercorns as well as braised beef, oily stuffed vegetables with rice and raisins, goat stew.
