Adriani , Drama viticultural zone, North - east Macedonia. 3,5 Ha linear privately-owned vineyards situated at an altitude of 200-300 m. Clay soil of fine drainage over thin limestones. Crop yield 800-900 kg per acre.
The harvest takes place at night, in order to have chilled grapes and not warm (contrary to the harvest that takes place during the day). As a result the grapes are, faster and without a thermal shock, cooling for the prefermentation cold maceration.
Varietal composition
Malagouzia 60%, Assyrtiko 40%
Vinification
Pre-fermentation cooling maceration and alcoholic fermentation at controlled temperatures. Only the free-flowing, without pressure, must is used for the fermentation. Aging on fine lees for 2 months. Fresh wine in stainless steel tank.
Tasting notes
Light yellow-green color, fruity character with hints of orange blossom, aromas of melon, peach, orange, pineapple and apricot. Smooth in the mouth with very good acidity, it has an excellent balance in taste with a lasting aftertaste.
Food pairing
Salads, risotto or pasta with seafood, grilled fish and chicken in white sauces, grilled sea bream, herb pies, fruits and yellow cheeses. Served in 8-10oC.
