Bold means intense and well, bold. Α highly concentrated wine, intense, with robust tannic substance. 

Tempranillo is the most famous Spanish variety and it participates in the famous Rioja wine. Its name comes from the word temprano, which in Spanish means early, because it matures faster than the other local varieties. The nectar follows a classic red vinification, with continuous dipping of the grape pulp at a strictly controlled temperature (25-28 ° C). It is then allowed to mature for 24 months in 2nd use French and American barrels.

Color: Deep purple.

Aroma: Moderately aromatic in the nose with animal notes (skin, meat, bacon) and dense red and black fruit (cherry, raspberry, sour cherry). Butter, tea, wet leaves, rosemary and soil complement the aromatic set. The barrel gives notes of pepper, cedar, nutmeg and vanilla.

Flavor: Medium-sized body, ripe tannins and sharp acidity. Cherry, sour cherry, raspberry, gooseberry framed by animal (herbal) and herbal flavors such as tea and forestfloor). Delicate notes of nutmeg, pepper and bitter chocolate. Long aftertaste.

Karavitakis Winery

Karavitakis Winery is located in Pontikiana, ​​Chania. For many generations, Karavitakis family has been involved in the production of olive oil and mainly wine and raisins. Since 1998, Manolis Karavitakis, with experience in managing the Kasteli Agricultural Cooperatives Union, has been refining family vineyards by planting new varieties and building a modern winery, a vertical winemaking, aging and bottling plant. The estate follows the most modern winemaking methods with the most sophisticated mechanical equipment to produce wines that can compete internationally.

The vineyards consist of 40 acres of privately owned land and many smaller estates of exclusively cooperating producers. All the above vineyards are under the constant supervision of Manolis Karavitakis and the agronomist of the estate. The key to higher quality wines is the low yields and the organic way of cultivating the vineyards, which are the first priority of the estate.

Karavitakis Winery is characterized by constant experimentation with new products, varieties and techniques. The main effort is to produce wines with all the typical characteristics of each variety cultivated, but also to obtain some evidence of the diversity of Crete's terroir. This is achieved because of the unique location of the vineyards that combines light altitude with immediate proximity to the sea.

At the 2020 vintage the winemaker - oinologist Vasiliki Akriotou decided to take advance of a small vineyard situated in the village Kathenoi in Central Evia and blend her beloved Savatiano (50%) with the famous Santorinis Varieties Asyrtico (38%) & Aidani (12%). The wine is called " The Hermit" and took its name from the location of the vineyard.
