“DORIC” RED DRY WINE, 750mL
Grape Variety: Kosmas
We proudly keep the last vineyard in the world with the grape variety “Kosmas”, which is a rare Ancient Greek grape variety of central Greece.The vineyard is located in the mount “Vardousia”, at about 800m above the sea level, in a virgin environment.
Grapes are being collected manually in plastic perforated trays and wicker cans and then they are being transported in the winery, when they are being crushed immediately. Every single grape is being hand-picked one by one before they are being crushed in the machine. Grape pulp that has been separated from the bunches, is being transferred via a special pump in open wooden tanks in order the extraction to be performed. No any chemicals such as sulfur is being used or any other non-natural yeasts at all. Old traditional and absolutely natural winemaking technique is being followed, in open wood tanks with the assistance of fir tree branches on top of the tank and mountainous thyme used as filter in the output of the tank. These techniques enrich the wine with unforgetable mountainous aromas and make it special. The temperature of the wine fermentation is low. The very cold temperatures are helping the natural clearance of the wine, which is poured into the barrels crystal clear. Then addition of resin made of fir tree is being applied, in a ratio specified by our own recipe. Resin made of fir tree is a natural preservative and also at the same time it gives aromas and mountain character in the wine. We do not use any other chemical or additive. We do not filter. We avoid any method that removes valuable components from our wine.
Description:
Color: Red rose color, until deep red (depending on the year), with ruby highlights.
Aroma: Strong aromas of fruits of the forest, vanilla and a bouquet of aromas
Taste: Round, light-bodied, soft tannins, with strong aftertaste.
Proposed pairing: Delicatessen plateau, hard and soft cheese, red meat. On the palate its tannins balance with meat and cheese proteins.
This wine has the ability of aging in the bottle.
